HDPE is what most kitchens buy for most stations, and there is a quality gradient inside the category. High-density polyethylene outperforms standard polyethylene, and medium-to-high density boards hold up better in high-volume kitchens. Look for the density rating rather than just “plastic.”

Rubber composite boards are the underrated option. They cost more and weigh more, but they resist deep knife scoring in a way plastic does not, which means they stay cleanable for far longer. Kitchens breaking down whole fish or large primals often find them cheaper per year despite the higher purchase price.

Wood is where the received wisdom is wrong more often than right, which is worth a section of its own.

Wood vs plastic cutting boards: what the research actually found

The assumption that plastic is inherently more sanitary than wood has been tested, and it did not hold up cleanly.

Dean Cliver’s food microbiology lab at UC Davis set out in the early 1990s to work out how to safely clean wooden boards, and found something they were not looking for: under matched conditions, wooden boards harbored fewer recoverable bacteria than plastic ones. Bacteria applied to clean wood were drawn below the surface within minutes and largely died there, while bacteria on plastic survived and multiplied on the surface. The lab’s subsequent work on cutting boards in Salmonella cross-contamination continued in the same direction.

The critical finding for a working kitchen was about used boards, not new ones. Once a plastic board has been knife-scarred, the grooves are very hard to clean, and bacteria persisted in them through hot water and detergent. Used plastic boards were consistently harder to decontaminate than used wooden ones.

None of which makes wood the right choice everywhere. Wood cannot go through a commercial dish machine, needs regular oiling, and is heavier to move between stations. The honest reading is narrower and more useful: a new plastic board is easy to sanitize, a scored plastic board is not, and the replacement schedule is doing more of the safety work than the material choice is. Kitchens that treat plastic boards as consumables get the sanitation benefit. Kitchens that run the same gouged white board for three years do not.

What the FDA Food Code and NSF certification require

Two standards govern this, and they cover different things.

The FDA Food Code, whose 2022 edition is the most recent full version and which most state and local health departments adopt in some form, requires food-contact surfaces to be durable, corrosion-resistant, non-absorbent, and smooth and easily cleanable, with enough weight and thickness to survive repeated warewashing. It also requires them to resist pitting, chipping, scratching, scoring, distortion and decomposition. That last clause is the one that retires boards.

NSF/ANSI 2 is the food equipment standard that certifies a specific product against those sanitation and design requirements. Health inspectors are trained to look for the NSF mark, because it is a shortcut to knowing a piece of equipment meets the benchmark most departments use. For cutting boards, NSF also recommends color coding, dishwasher safety and warp resistance. Buying NSF-certified boards will not by itself pass an inspection, but buying uncertified ones invites a conversation you do not want to have mid-service.

A practical note on “FDA approved”: the FDA does not approve cutting boards. It sets requirements for food-contact materials. A vendor advertising an “FDA approved” board is using marketing language, not a certification. NSF certification is the mark with a testing body behind it.

There is no single legally mandated color scheme, but the industry has converged on one, and consistency inside your own kitchen matters more than matching anyone else’s chart.

Purple is the newest addition and the one worth adopting deliberately. Running a dedicated allergen board removes an entire category of risk from your prep line and gives you something concrete to point to when a guest asks.

Two failure modes are common. The first is buying the full seven-color set for a kitchen that only has three real prep tasks. Unused colors get repurposed and the system quietly stops meaning anything. Buy only the colors you will dedicate. The second is not posting the chart. If the code lives only in the head of the person who bought the boards, new staff will guess.

What size and thickness of cutting board a restaurant needs

Sizing is driven by the station, not by preference.

Thickness: half an inch is the working standard for commercial HDPE. Quarter-inch boards flex, slide and warp in a dish machine. Boards thicker than three-quarters of an inch stop being practical to lift and wash frequently, which is the opposite of what you want. Wooden butcher blocks are a separate category and can run several inches.

Footprint: 18″ x 12″ fits a standard prep table without hanging over the edge. 20″ x 15″ gives room to break down larger items and is the common choice for a butchery or fish station. 6″ x 10″ bar boards handle garnish work. Match the board to the table and to the sink you will wash it in. A board that does not fit your three-compartment sink will get cleaned badly.

Quantity: plan for enough boards that a soiled one can go straight to the dish pit rather than getting wiped and reused. A rough rule is two boards per color per active station, so one is always clean.

Grip: non-slip edges or a damp towel underneath. A board that slides during a cut is the setup for a serious injury.

Boards also need somewhere to live between shifts. Vertical racks that let boards drain and air-dry beat stacking them wet, which traps moisture between surfaces.

How to clean, resurface and retire a commercial cutting board

Plastic boards go through the dish machine or the three-compartment sink: wash, rinse, sanitize, air dry. Air drying matters, because stacking boards damp defeats the sanitizing step.

Wooden boards get scraped, hand-washed with hot soapy water, sanitized, stood on edge to dry, and oiled with food-grade mineral oil on a schedule. Never submerge them and never put them in a dish machine.

Retiring a board is the part kitchens get wrong, usually by keeping boards far too long. The Food Code’s requirement that surfaces stay resistant to scoring is the standard, and the practical test used across the industry is simple: rub a dampened cotton swab lightly across the surface, and if fibers snag and pull off into the grooves, the board is no longer cleanable. Retire it.

Deeply scored or gouged plastic boards can sometimes be resurfaced, planed flat by a service, which is worth doing on thick boards and not worth doing on thin ones. Wooden boards can be sanded and re-oiled repeatedly, which is a cost advantage over their lifetime.

Build board replacement into a budget line rather than treating it as an unplanned expense. A kitchen running eight boards on a twelve-to-eighteen-month cycle is spending a predictable and small amount of money to remove a recurring inspection risk.

Cutting boards for catering and off-site kitchens

Catering changes the calculation, because the boards travel.

Weight becomes a constraint. The rubber composite board that is ideal on a fixed fish station is punishing to load into a van twice a day. Lightweight HDPE in smaller footprints usually wins for off-site work, and flexible cutting mats are useful as a color-coded supplement for a temporary station, though they are not a substitute for a rigid board.

Transport also introduces a sanitation gap that fixed kitchens do not have: boards that get packed damp, or packed against dirty equipment. Pack boards dry, in their own covered container, and treat the return trip as dirty regardless of what happened at the event.

The other half of off-site prep is knowing what actually needs to travel. Kitchens running a prep list through a kitchen display system rather than a paper ticket rail tend to have a much clearer picture of which stations are firing at an event, which makes the pack list shorter and the van lighter.
