Meet an influencer: Emily - LovelyEmy
Been interested in health care since college, Emily is a public health researcher, digital creator, blogger, designer, and photographer. Jack of all trades!
She enjoys creating organic and sunkissed photographs. She shares eye-catching and inspiring posts on her blog and social media accounts ranging from lifestyle, beauty, fashion to food, and health.
We spoke with Emily about her passion for food.
We realized you study & work in the healthcare industry, cancer researcher, and also you have a passion for food. Can you tell us about it?
I have always been interested in health care from a non-physician type of way. College was when I really found out what I wanted to do and it was public health. Being a public health researcher it enables me to study and research all of the many aspects that contribute to population health like health outcomes, disparities, determinants of health, and of course policies. I am working in a cancer research team currently looking at racial health disparities and how we can improve outcomes while reducing mortality. I am currently working on my doctorate in health sciences which really equips me to understand health on a much larger spectrum. Personally, I try my best to incorporate all that I know about health in my daily life. That being said, I try to focus on my mental health, physical health, and of course what I eat!
Can you tell us about your favorite childhood food?
I am a carbs fan so I love any type of pasta dish. I love throwing in some steamed broccoli in any pasta dish. My childhood favorite was of course macaroni and cheese and I would have my parents cut-up hot dogs to throw in.
What did food mean to you before the lockdown?
Food was not as important to me I am guilty to say before the lockdown. I am fortunate to be able to eat out so often and only cooked meals a few times a week rather than most days. The lockdown really opened my eyes to the many recipes and things you can make at home rather than spending money on so much takeout.
How did your food choices change during the lockdown?
My food choices have definitely changed during the lockdown. With no daily commute time used, my boyfriend and I have more time to prep and decide on what to eat for dinner. I usually finish work earlier around 4:30pm and I start prep work usually 30 minutes before my boyfriend is off work. Having both of us available to cook makes things go by much quicker so we can enjoy a full dinner together.
What do you miss the most? What did you discover new?
I actually do not miss the commute. We spent over 2 hours a day just commuting to work and back home and also have a puppy to care for, By the time we usually get home we are tired and look for quick and easy meals to make. With commute out of the way we are able to set aside time to really prepare full meals.
Do you have a food hack or a 2 mins recipe you can share?
Right now my favorite meal to make is cutting up broccoli and sprinkling salt, pepper, and olive oil and baking it for about 15 minutes for a brunch see dish and cooking some lightly seasoned chicken for an easy quick meal.
